Instructions & photos: Emilia Mäkinen

Ingredients

Base

17 Oreos

70 g butter

Gray layer

1 dl plain yogurt

125 g quark

100 g unflavored cream cheese

100 g Halva licorice

2 egg whites

3 gelatin sheets

4 tbsp hot water + 1 tbsp licorice sauce

6 tbsp licorice sauce

White layer

1 dl plain yogurt

125g quark

100 g unflavored cream cheese

2 egg whites

3 gelatin sheets

100g white chocolate

2 tablespoons of lemon juice

1 teaspoon of vanilla flavoring

0.75 dl of sugar

For decoration

Crushed white chocolate

Chopped licorice pieces

Recipe

  1. Melt the butter and crush the oreos into small crumbs. Mix together into a smooth mass and press to the bottom of the springboard pan.

  2. Prepare the gray layer. Mix yogurt, quark, cream cheese and chopped pieces of cake together. Beat the egg whites into a stiff foam. Soak the gelatin leaves for a few minutes in cold water until they are soft. Mix licorice sauce (1 tablespoon) and hot water together. Dissolve the gelatin leaves in the mixture. Combine the egg whites and yogurt mixture together. Whisk in the gelatin sheet mix. Finally, mix in the licorice sauce (6 tablespoons). Pour the whole mixture into a springform pan and let it harden for a couple of hours.

  3. When the gray layer has solidified, prepare the white layer. Mix the yogurt, quark, cream cheese and egg whites as in the gray layer. Mix vanilla flavoring and lemon juice into the mixture as well. Melt the white chocolate and dissolve the soaked gelatin sheets in the melted chocolate (if the gelatin sheets don't dissolve, add a little boiling water). Add the gelatin mixture and sugar to the yogurt mixture. Put in the fridge to harden.

  4. Decorate the cake with white chocolate and licorice pieces.

  5. Treat yourself to a delicious and fresh cake that melts in your mouth.
